A standout sake nurtured to life by local development.Made from the principle that sake brewing starts from the rice, Yachiya brewery has worked closely with local farmers to produce a completely unique sake rice grain that reflects the qualities of Ishikawa prefecture and used it to brew this rich and sharp junmai sake. Aptly tagged Ishikawamon, like the name of the aforementioned rice, this sake honours the longstanding brewing talent and potential of the region, where the cold weather, verdant fields and underwater springs from the nearby Mount Haku produce an ideal sake brewing landscape, and implements it into an umami sweet and dry junmai sake. Balanced with a low acidity and soft, gentle mouthfeel, this sake drinks clean and incredibly full-bodied, milled to only 65% so the natural fruity flavour remains ready to be unlocked.
