Gekkeikan’s Bizan (meaning ‘Beautiful Mountain’) Sweet Potato Shochu is made by carefully fermenting steamed sweet potatoes with rice koji (the culture used to make Japanese alcohols) and slowly distilling and ageing it over low temperatures. This results in a fruity but dry, lightish bouquet with spicy and umami flavours. A must-try for shochu lovers.
